Today we are tacklingthe picky-eater subject
of embracing boring food.
Picky eaters can likeplain, and that's okay.
That means today plain is the new trendy.
Today, we are tackling a BYOBL.
That's a build your own boring lunch.
First up, fruit skewers,fruit on a stick is my jam.
You know this by now.
Keep it colorful.
I went with strawberries and green grapes,
but almost anything can work.
Go with what your picky eater likes,
or maybe sneak on a few new items too.
Entice even more by including a fruit dip.

I combine yogurt, Greek, orplain, or even dairy-free
if preferred, with honey totaste and a bit of cinnamon.
So easy!

But it makes the fruit on astick have even more intention
and appeal, plus, Greek yogurtwill give some protein too.

Letting picky eaters build your own
is a great way to encouragethem to enjoy food.
I'm setting up a DIY taco lunch today.
That means tortillas.
Can you sneak in a whole grain variation
or corn-based instead of white flour?
Work with what you can.
I've added plain, shreddedchicken just seasoned with salt
to keep it simple and less intimidating,
shredded cheese, becauseit makes almost anything
more palatable and exciting to eat,
plus, you get extra protein.
I'm also including amild, picky-eater-friendly
tomato salsa with some sneaky veggies.
I combine chopped tomatoes,bell pepper, cilantro,
optional, for flavor, samewith red onion, lime juice,
and salt in a food processor.
Pulse until dippable.
If you prefer a chunkier salsa, pulse less
or just chop the ingredientsto a size you prefer.
Pulsing this integrates everything,
so it's easier to scoop andeasier to hide ingredients.
Get creative with this.

In addition to our tacos,I'm including a popcorn
as a snack.
I used an air popper to pop my corn
and keeping this whole-grain snack light.
To add a twist, I spray thekernels with cooking spray
and sprinkle on somecinnamon, tossing to coat.
This gives it a sweet tastewithout the added sugar.
You could, of course, addthe sugar if you want.
And that is thebuild-your-own-boring-lunch box.
It's not so boring, right?
We really took common ingredients
and turned them into something fun.
That is what it's all about.
Remember, take what you wantand leave what you don't
with all of these.
This is just healthy inspirationthat you can make your own.
